Black Forest Cupcakes
These very tasty, impressive looking cupcakes are surprising easy to make! Recipe makes approximately 12 cupcakes.
Ingredients
2 eggs, seperated
50g soft butter
80g caster sugar,
pinch of salt,
125g milk chocolate buttons,
125g milk,
120g plain flour,
1 tsp baking powder.
For topping:
4 tbsp cherry liqueur,
Morello cherries (glazed, canned or fresh),
150ml whipping cream,
1 tbsp icing sugar,
grated chocolate to garnish.
Method
Stage 1: The Cupcakes!
1. Heat the oven to 180oC (for fan assisted).
2. Beat the egg yolks, butter, 40g sugar and a pinch of salt until creamy.
3. Gently melt all the chocolate, either in a heatproof bowl over a saucepan of simmering water, stirring regularly; or in short intervals in the microwave.
4. Stir the melted chocolate into the creamed egg yolk mix. Then gradually add the milk.
5. In a separate bowl, beat the egg whites with the remaining sugar until stiff.
6. Shift the flour and baking powder together.
7. Fold the egg whites and the flour mixture alternately into the chocolate mixture, starting and ending with the flour.
8. Place cupcake cases into an appropriate muffin pan, and 2/3 fill with the batter.
9. Bake on the middle shelf for 15minutes. Take out and cool in the pan for 5minutes, then turn out onto a wire rack to cool.
Stage 2: The Topping!
10. Drizzle each cupcake with cherry liqueur.
11. Whip the cream until stiff and beat in the icing sugar.
12. Pipe or spread the cream on top of each cupcake. Garnish each cupcake with chocolate shavings and a cherry.
For added decadence, whip some extra cream (about 100ml more); then before decorating, cut each cupcake in half and spread the base with cream, add a couple of cherries, replace the top and decorate as normal.
